Is there something wrong with the damage model in IF? Example; I can fire about 20-30 mainrounds with the Pzkw V at a T34 without it taking a scratch? This repeats it selves with every tank in the game? Any ideas?

Vanilla If or IF/Arma Conversion IF and what version arma2Co version or the Arma3 version?
Im assuming vanilla IF as the bug reporting section your posting in is for vanilla.

What patched version of the game do you have?

Oops, dunno if this is the right place? But it´s the arma2Co version. And the latest patches. both game vice and IF vice =)

20-30 shots does sound a lot.
On average about 4 or 5 shots will kill a tank or SPG, you can usually tell it's dead if it stops moving and shooting, or if the crew bails.
If you like, put a couple more shots into it for good measure and move on, don't waste more shells trying to make it burn or explode.
There's no way to know for sure if a burning tank/SPG is dead, I've sometimes seen them shooting even when they're on fire.
But if a tank/SPG explodes in a fireball you can safely assume it's dead. 

General notes-
In some games (depending on difficulty level etc) a tank is probably dead if its icon disappears from the map.
AI bot tank gunners have a tendency to waste ammo by keeping on firing at tanks/SPG's that are probably already dead, so try to have a human gunner on board.
Use APCR against heavy tanks, use AP against medium tanks/SPG's, use HE against light halftracks, scout cars, soft vehicles and infantry. (But in the heat of battle you might not have time to keep switching, so just fire whatever's in the breech)
If you've got time, try to manoeuvre to hit tanks/SPG's in their thinner side or rear.
